Very easy to prepare muffins that are loved by all members of the family, children in particular.
Serve them warm while the chocolate inside is still melting, left to cool the chocolate will solidify but they will be also delicious.
Ingredients: 12 muffins
For dry ingredients
1½ cups all-purpose flour
3 tablespoons cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
Dash salt
¾ cup dark brown sugar
For wet ingredients
¾ cup yogurt
2 eggs slightly beaten with 1 teaspoon vanilla
½ cup butter (112 g), melted and cooled
100 g coarsely grated black chocolate (if using milk chocolate then use ½ cup brown sugar)
For filling
Chocolate bar weighing about 130 g. cut to 12 pieces
1. Place 12 paper cups in 12 muffin holes, or butter and flour 12 muffin tin holes.
2. Sift flour, baking powder, baking soda, cocoa, and salt into a large bowl, mix with sugar.
3. In another bowl, whisk briefly the yogurt, add the eggs, melted butter, grated chocolate, and mix well.
4. Make a well in the flour mixture, add wet ingredients to dry ingredients in the well, and stir with a fork just to mix. (Mixture will look lumpy, do not over mix).
5. Place about 1 tablespoon of the mixture in each muffin hole and place a piece of chocolate on top.
6. Spoon the rest of the dough among the cups.
7. Bake in a 175C° (350F°) preheated oven about 20 minutes.
8. Remove muffins from oven, let rest few minutes then remove from tins, remove paper cups.
Muffins are at their best served the same day and served warm. |
