GREEN BEANS IN OLIVE OIL (LOUBIEH BIL ZEIT)

Gren Beans in Olive OilA traditional Lebanese vegetarian dish prepared in a healthy and quick method eliminating the frying process.

 

Ingredients:  4 servings

1 kg green beans

1½ kg red ripe tomatoes, peeled, and chopped

2 teaspoons tomato paste (optional)

2 onions cut moon shape

10 garlic cloves, sliced

3 tablespoons olive oil

Salt and freshly ground black pepper

 

1.      Trim beans, wash and dry, then cut each in half or thirds.

2.      Mix green beans with tomatoes, tomato paste if being used, onion, garlic, oil, salt and black pepper and place in a pot over medium heat.

3.      When the mixture comes to a boil, lower heat to very low, cover pot and cook 30 minutes or till green beans are tender.

4.      Remove and simmer bean stirring from time to time till liquid evaporates and little sauce is left.

5.      Serve cold with Arabic flatbread and spring onion or radish.

 

N.B.:  To prepare traditional green beans the frying method:  Fry onion in ½ cup olive oil, add garlic, then green beans and fry ingredients then cook with tomatoes.  The recipe above is as delicious, has fewer calories and much easier to prepare.

Peeled canned whole or chopped tomatoes may be used instead of fresh tomatoes.
