A delicious recipe for dieters that has about 300 calories per person
Ingredients: 4 servings
4 skinless boneless chicken breasts (breasts of 2 chickens)
⅔ cup Firkhal flour (very fine semolina)
2 tablespoons ground coriander
Mixed vegetables such as peas, carrots, baby onions
2 teaspoons olive oil or vegetable oil
Salt and freshly ground white pepper
For decoration
Few parsley leaves
1. Clean breasts and separate each into 2 parts, remove small fillet and keep for another use.
2. Pound chicken breasts on the thick part to have them of equal thickness, season with salt and white pepper.
3. Mix flour with coriander, salt, and white pepper. Press each side of the breasts in the flour mixture.
4. Fry breasts on both sides on medium heat in a non-stick frying pan in one teaspoon oil till cooked but without allowing them to color.
5. Chop vegetables and boil separately in salted boiling water, drain, and fry briefly in 1 teaspoon oil. Season.
6.Serve chicken breasts hot with the hot vegetables on the side, and garnish with parsley leaves.
N.B.:
It is essential to keep the breasts moist by removing them from heat the minute they are cooked, overcooking dries chicken breasts. |
