Pineapple slices sprinkled with pounded mint and sugar, a very refreshing fruit salad for a nice finale after heavy meal with a distinctive mint flavor that may be prepared in five minutes. Canned pineapple may be used.
Ingredients: 8 servings
1 fresh ripe pineapple
30 big mint leaves, washed (see note below)
4 tablespoons sugar
Dash of ground ginger
1. Peel pineapple, remove black eyes and cut into quarters lengthwise.
2. Remove center hard core and slice each quarter into lengthwise thin slices and place in a serving plate (Recipe may be prepared to this stage a day in advance, refrigerate).
3. Just before serving, pound mint leaves with sugar and ground ginger in a pestle and mortar till crumbly.
4. Sprinkle pineapple slices with mint crumble and serve cold.

Make sure that mint leaves are not wet but completely dry. |
